It all started with a craving.

A craving for the Algerian pastries of my childhood. Those whose taste transcends generations.
Those prepared to celebrate, transmit, and bring people together.

Far from home, I no longer found that authenticity. So, I wanted to revive it.

After a journey in Paris and studies at the Sorbonne, I left a well-trodden path to return to the essentials: the gesture, the memory, the taste.

As a child, I spent my summers with my aunt, a halwajiya pastry chef.
During wedding seasons, platters followed one another, the scents of orange blossom filled the air, and every gesture had meaning.

Nothing was left to chance. Everything was transmitted in the silent language of hands.

NOS TRADITIONS was born from this memory.
An Algerian pastry faithful to its heritage, conceived with a purer, more balanced, and more contemporary expression.
